My Mother's Pralines

These are the Best

 

  • 2 c. white sugar
  • 1 c. light brown sugar, packed
  • 1 c. evaporated milk
  • 3/4 c. white Karo
  • 1 pinch of soda
  • 2 c. pecans
  • 1 tsp vanilla

Mix all ingredients, except pecans and vanilla.  Stir over low until sugar dissolves.  Add nuts and cook to soft ball stage.  Let cool for a few minutes.   Add vanilla and beat.  Drop by tablespoon on wax paper

 

Quick Pralines

 

  • 1/4 c. water
  • 2 tbsp. butter
  • 1 c. light brown sugar
  • 1 c. confectioners sugar
  • 1/2 tsp. vanilla
  • 3/4 c. chopped pecans

In medium saucepan, bring water and butter to a boil;  stir in sugars.   Return to boiling; boil and stir for 1 minute.  Remove from heat; stir in vanilla and pecans.  Beat until mixture thickens.  Immediately drop from teaspoon onto wax paper.  Cool.

 

New Orleans Pralines

  • 3 c brown sugar
  • 1 1/2 c. pecans
  • 2 tbsp. butter
  • 1 c. milk
  • 2 tbsp corn syrup (white)
  • 1 tsp. vanilla

Mix sugar, milk, and syrup in boiler.  Cook until forms hard ball in water and remove from fire.  Add butter and vanilla.  Let Cool.  Beat until creamy.  Add nuts and drop into cakes on greased platter.
